There’s a certain magic to Jaipur evenings: the sun slipping behind the forts, the hum of ghunghroos in the distance, and the mingling scents of spices, flowers, and warm sandstone in the air. It’s a city that speaks in colours and flavours, each moment steeped in heritage yet refreshed with modern vibrance.
Chef Ayush Khandelwal, Co-founder of Paro, Jaipur, distils that essence into five signature cocktails, each inspired by a different shade of Jaipur. Some are floral and light, others smoky and bold, but each is an ode to the Pink City in a glass.
1. Shehar
Ingredients: Rose-infused gin, Grapefruit cordial, Tonic water
Rose-infused gin evokes sprawling gardens and marble courtyards, while bittersweet grapefruit and crisp tonic add a sharp, modern edge. It’s delicate yet grounded, much like a quiet evening drive past Albert Hall.
2. Royal Heritage
Ingredients: Saffron-infused vodka, Pineapple, Rose water, Caramel, Lemon, Aromatic bitters
Amber Fort in a golden glass — this is Jaipur’s regal grandeur, reimagined. Saffron lends a royal warmth, pineapple and rose water bring lightness, caramel adds depth, and bitters balance the finish.
3. Indian Summer
Ingredients: Smoked rosemary gin, Strawberry, Watermelon juice, Lime, Tonic
Civil Lines nostalgia in liquid form. Cooling watermelon and strawberry recall childhood summers, while smoked rosemary introduces a mature, aromatic twist.
4. Spicy Sunset
Ingredients: Scotch, Fresh ginger, Orange marmalade, Lemon juice
Bold as the Nahargarh skyline at golden hour. Scotch and ginger channel old Jaipur kitchens, while orange marmalade glows like evening light on sandstone.
5. Kasuri Methi and Beetroot Picante
Ingredients: Kasuri methi–beetroot pickle infusion, Jalapeño, Tequila, Agave
The most daring of the five – herbal kasuri methi meets tangy pickled beetroot in a vibrant infusion, with jalapeño heat and tequila’s punch smoothed by agave.
