Pickle is a staple in every Gujarati kitchen, and its charm never fades—summer or winter. Often, when we dine out, the tangy, flavorful mix of pickles served alongside meals makes us reach for extra rotis. A combination of lemon, carrot, cabbage, green chillies, and raw mango creates that irresistible taste. But why visit a restaurant every time? Here’s a simple, homemade recipe to make restaurant-style mixed pickle at home.

Ingredients And Prep

Start with about 2 kg of raw mangoes—peeled or unpeeled, but ensure no seeds. Cut them into small pieces. Set aside 750 g of slightly ripe yellow mangoes separately. Mix the rest with 2 tbsp salt and 1 tbsp turmeric. You can also add 500 g of carrot, cabbage (if in season), 50–60 g of ginger, 100 g of green chillies, and lemon. Wash the vegetables thoroughly, pat dry, and chop into small pieces.

The Spice Mix

Dry roast 1 tsp fenugreek seeds, 1 tsp cumin, 2 tsp mustard seeds, 2 tsp coriander seeds, and a pinch of black pepper on a low flame. Cool and grind into a fine powder. Then mix in 4 tbsp yellow mustard seeds, 1 tsp asafoetida, 1 tsp turmeric, 1 tsp Kashmiri red chilli, 1 tsp hot red chilli, and salt to taste. Optional: add 1 tsp melon seeds.

Cooking The Pickle

Heat 1 cup mustard oil in a pan. Once hot, add all the spices and roast briefly. Add the chopped vegetables and mango pieces. Stir in 2 tbsp sugar—it enhances the flavours. Mix everything well and let the pickle cool.

Setting The Pickle

Once cooled, transfer the pickle to a clean jar and cover with a cloth. Let it rest for a day so the vegetables and spices absorb the oil. The next day, add 2 tbsp of vinegar to preserve the pickle and extend shelf life.

Pro Tips

This pickle pairs wonderfully with puri, paratha, or thepla. The sweet-sour balance of lemon and mango makes it irresistible.

Add raisins if you like extra sweetness.

More oil eliminates the need for vinegar.

Always use a clean, dry jar.
