Pressure cook the soaked dals with vegetables, salt, turmeric, and water.<\/li>\n<li>2. Grind the paste ingredients until smooth.<\/li>\n<li>3. Heat oil, saut\u00e9 chopped onions, then add the paste and cook till oil separates.<\/li>\n<li>4. Heat ghee, add hing, jeera, and ginger.<\/li>\n<li>2. Add cucumber, millets, dal, salt, haldi, and water.<\/li>\n<li>3. Pressure cook for 3\u20134 whistles.<\/li>\n<li>4. Finish with a ghee-jeera-green chilli tadka.<\/li>\n<li>5. Add broth, coconut milk, noodles, tofu, soy sauce, and sugar.<\/li>\n<li>4. Simmer until noodles cook.<\/li>\n<li>5. Pound lemongrass, galangal, lemon zest, onion, garlic, and coriander root into a paste.<\/li>\n<li>2. Heat coconut milk until it splits, add curry paste, cook 1 min.<\/li>\n<li>3. Add vegetables, lime leaves, more coconut milk, and water.<\/li>\n<li>4. Cook 2\u20133 mins, then add tofu, basil, soy sauce, and jaggery.<\/li>\n<li>5. Add coconut, Chettinad masala, and water. Simmer 5 mins.<\/li>\n<li>5. Garnish with fried curry leaves &amp; red chillies.
