Founded in Naples in 1984, the AVPN is the global authority that safeguards the tradition of true Neapolitan pizza, with fewer than a thousand certified pizzerias across sixty countries. The certification confirms that Si Nonna\u2019s sourdough pizzas<\/a> meet every international standard set by AVPN \u2014 from the dough\u2019s 24-hour fermentation to ingredient quality, oven design, and baking technique. The recipe itself traces its origins to a serendipitous encounter with Nonna Galliano\u2019s original mother dough in Naples \u2013 the spark that inspired founder Ayush Jatia to bring authentic Neapolitan pizza to India.<\/p>\n
